Description

Campofilone Fettuccine - Marcozzi di Campoflione

The Marcozzi di Campofilone pasta factory expresses all the artisanal expertise of the region through its Campofilone Fettuccine, offering a pasta shape that represents the ideal balance between pasta-sheet thickness and cutting precision. Production begins with a rigorous selection of raw ingredients: only durum wheat semolina from the Italian supply chain, with a high protein content, and fresh hen's eggs. The dough, made without added liquids, is worked with great patience to obtain an elastic and compact pasta sheet, which is then rolled and cut into uniform, regular strips. This attention to the initial production process is essential to ensure that the pasta maintains its structural integrity during boiling, preventing it from losing its natural firmness.

The element that transforms ordinary pasta into a Marcozzi speciality is the process of slow and gradual drying. The Campofilone Fettuccine are left to rest at low temperatures for a period that respects the natural evaporation of moisture, thereby preserving the amber-yellow colour and the original aromatic bouquet of the ingredients. This traditional method gives the pasta exceptional surface microporosity; to the touch, the fettuccine feel rough and matte, ready to bind perfectly with the sauce. During cooking, the pasta releases an aroma of mature wheat, reminiscent of Sunday meals in the village, while maintaining a velvety texture that melts in the mouth without ever losing the right firmness.

From a gastronomic perspective, Campofilone Fettuccine are extremely versatile: their welcoming surface makes them perfect for classic meat sauces, as well as preparations featuring porcini mushrooms, truffle or simple butter and sage emulsions. The pasta's ability to double in volume when cooked in water is an indication of a dense and rich pasta sheet, capable of providing a generous yield that satisfies even the most demanding palates. The stability of the shape and the brightness of the colour make every preparation visually appealing, adding a touch of artisanal elegance to every recipe. Each pack is the result of a controlled supply chain and continuous quality monitoring, ensuring a product that faithfully reflects the identity of the Marche village.

Choosing Marcozzi fettuccine means relying on a family of pasta makers that places production transparency first. Manual packaging and meticulous attention to detail reflect a daily commitment to excellence, offering an alternative to industrially produced pasta. In the kitchen, it is recommended not to overcook the pasta in order to fully appreciate the quality of the Italian wheat and the delicacy of the egg pasta sheet. Every taste of Campofilone Fettuccine is a sensory journey through the tradition of the Marche region, ensuring consistent gastronomic quality and food safety based on respect for slow and genuine production methods.

Semi-Aged Goat Cheese – Sepi The Sepi Semi-Aged Goat Cheese is a Sardinian table cheese with a bold character, made exclusively from pasteurised goat's milk. Its minimum ageing period of 60 days develops an intense and aromatic flavour, with the characteristic goaty note typical of goat cheese becoming progressively more pronounced, leading to a pleasantly spicy finish. The paste is straw yellow, compact, with a texture that evolves from grainy to crumbly. Perfect for those seeking a strong flavour, it pairs beautifully with robust red wines such as Cannonau and with sweet-and-sour preserves. An outstanding example of Sardinian cheesemaking tradition, bringing the intensity of the island's pastures to the table. The rind is not edible.
