The Carnarolis is also produced in our rice paddies and it is a japonica variety, from rounded bean, particularly rich in starch and amylose that allow a perfect seal during cooking and a link to the really superb seasoning so much to consider it the best rice for risotto.

We produce the white kind of this variety and it is totally deprived of the outer coating named lolla.
