Calamarata - Pastificio Futuro

Pastificio Futuro Calamarata is a durum wheat semolina pasta shape that embodies the excellence of Roman artisanal food production.

Made in the workshop located inside the Casal del Marmo Juvenile Detention Centre, this pasta features bronze-die extrusion, which gives it a rough surface that is perfect for holding sauces.

Thanks to slow drying at low temperatures, it preserves its organoleptic properties and the authentic aroma of wheat.

Description

Calamarata - Pastificio Futuro

The elegance of Pastificio Futuro Calamarata comes from a skilful combination of carefully selected raw materials and production methods that respect the rhythms of nature. This shape, typical of the Mediterranean tradition, is produced in the professional workshop in Casal del Marmo, Rome, where pasta making becomes a training opportunity for young people involved with Cooperativa Sociale Gustolibero. The choice of high-quality durum wheat semolina ensures a strong protein structure, which is essential for producing pasta that retains its shape and texture even after cooking. The opaque straw-yellow colour and the surface texture that can be felt to the touch are distinctive signs of a product made outside the logic of mass industrial production.

The bronze-die extrusion stage is essential in determining the final texture of Calamarata. Unlike Teflon dies, bronze creates friction that makes the surface of the pasta porous and irregular. This technical characteristic allows Calamarata to absorb sauces evenly, creating a perfect combination between the starchy pasta and the sauce. The pasta is then subjected to slow drying at carefully monitored temperatures that are never excessive. This process, which can take several hours, is crucial for preserving the characteristics of the wheat and avoiding thermal stress that could alter its authentic flavour. The result is a product that, once immersed in boiling water, releases the aroma of mature wheat and retains an extraordinary firmness when bitten.

The structural stability of Calamarata makes it a favourite choice for fish and seafood dishes, where its circular shape visually recalls squid rings. However, its versatility also makes it suitable for traditional recipes from Lazio and for hearty vegetable-based sauces. The texture of Pastificio Futuro artisanal pasta ensures that every bite is perfectly balanced, with a centre that remains al dente and a surface capable of holding the sauce's emulsion. The care taken in the manual packaging reflects the attention to detail that characterises the entire production chain, providing the consumer with a food product that expresses both technical excellence and human commitment.

Serving Calamarata means becoming part of a story of renewal inspired by the values of solidarity. The Pastificio Futuro project was created with the aim of providing concrete professional opportunities, transforming time spent in detention into time dedicated to learning. Transparent production and an unwavering commitment to quality make this pasta a symbol of ethical and sustainable Made in Italy. It is designed for those who seek authenticity in the kitchen and wish to elevate their dishes with an ingredient that makes no compromises between flavour and social value. Its resistance during the final tossing and emulsification in the pan, together with its persistent fragrance, makes every preparation an expression of high-quality everyday cuisine, suitable both for convivial occasions and demanding professional catering.
